How Milk Pasteurization Works: Time, Temperature and Equipment

Quick answer: Pasteurization heats milk to a set temperature, holds it there long enough to kill harmful bacteria, then cools it quickly. The two standard methods are batch (low temperature, long time): 63 °C for 30 minutes, used by batch pasteurizers in small dairies, and HTST (high temperature, short time): 72 °C for 15 seconds, used in continuous plants. Cool the milk to about 4 °C straight after.

How long does a batch take?

The holding time is fixed (30 minutes at 63 °C), but the full cycle also includes heating the milk up and cooling it down. Heating time depends on the batch size and the heat source (electric or gas), so larger batches take longer. Ask us for the cycle time of the size you are considering.

Step by step (batch pasteurizer)

  1. Test and filter the raw milk at reception.
  2. Heat to 63 °C while stirring.
  3. Hold at 63 °C for 30 minutes.
  4. Cool quickly to about 4 °C.
  5. Pack or dispense, and clean the pasteurizer (cleaning guide).
