Homogenized Milk Explained: Do Small Dairies Need a Homogenizer?

Quick answer: Homogenization forces milk through tiny gaps at high pressure so the fat globules break up and the cream does not rise to the top. It is different from pasteurization, which heats milk to kill germs. Large processors homogenize for packaged milk and yoghurt; most small dairies and milk ATMs sell pasteurized, non-homogenized fresh milk, where a cream layer is normal.

A high-pressure pump pushes warm milk through a narrow valve. The fat globules shatter into much smaller ones that stay evenly spread. Homogenizers are large, expensive machines suited to processing plants with steady volumes.
