The Process
- Test and pasteurise good milk: pasteurisation.
- Cool to the temperature the culture needs and add the culture.
- Add rennet so the milk sets into a curd.
- Cut the curd and stir to release whey.
- Drain the whey and fill moulds.
- Press (for firmer cheeses) and salt.
- Age in a cool, clean room for aged types; fresh cheeses are sold quickly.

Fresh cheeses (for example paneer-style or soft cheeses) need no ageing room, so cash comes in sooner. Follow tested recipes from your culture supplier.
