Keeping Milk Cold from the Farm to the Buyer

Why the Cold Chain Matters

Bacteria in warm milk multiply quickly, raising acidity until the milk is rejected. Cooling slows them down, so cold milk keeps its grade and price.

Stage by Stage

  1. At the farm: milk into clean stainless cans; cool quickly or deliver to the collection centre within the time the buyer accepts.
  2. Collection centre: test, then cool in a milk chiller (what size cooling tank).
  3. Bulk transport: an insulated tanker keeps cooled milk cold to the processor.
  4. Delivery: test again on arrival.
