Quick answer: UHT (long-life) milk is heated to about 135–150°C for a few seconds and packed aseptically, so it keeps for months unopened without a fridge. Fresh pasteurized milk is heated less (for example about 72°C for 15 seconds) and must be kept cold, lasting days.
