How to Start a Jam, Tomato Sauce or Chilli Sauce Business in Kenya

Quick answer: Jam and sauces are cooked to the right thickness (jam to a set; sauce with vinegar and salt for preservation), hot-filled into sterilised jars or bottles, capped or induction-sealed and labelled with ingredients, dates and batch numbers. You need a clean kitchen with county food licences, medical certificates and KEBS certification to sell in shops. H-TECH supplies the filling and packing side: a manual liquid and paste filler from KSh 95,000, induction sealers and labellers.
Key facts

How Jam and Sauce Are Made

  1. Prepare fruit or tomatoes: wash, sort, remove bad pieces, chop or pulp.
  2. Cook: jam with sugar (and pectin or lemon for setting) until it sets; sauces with vinegar, salt, sugar and spices.
  3. Check consistency: a cold-plate test for jam; a consistent thickness for sauce.
  4. Hot-fill into clean, sterilised jars or bottles while hot.
  5. Cap and seal immediately; invert jars briefly or use induction seals for a tamper-evident, leak-proof seal.
  6. Cool, label and code each batch.

The manual liquid and paste filler handles fluid or viscous products such as juice, honey and sauces (see the product page). An induction sealer bonds a foil liner to the bottle neck, which stops leaks and shows tampering. More: liquid filling machine guide, induction vs heat sealing and bottle labelling guide.
